Gaby became a flamenco dancer and moved to New York city when she was 19. She appeared in the Broadway shows "By the Beautiful Sea" and "Mask and Gown" as a dancer in the 1950s before becoming a choreographer.
After becoming partner in the production company Concepts Unlimited, she was involved in "Norman Rockwell's World: An American Dream" in the early ‘70s, a documentary about artist Norman Rockwell's life and work. The film won the Oscar for Best Short Subject in 1971.
Jacoby-Monet Productions, the production company she formed with her husband, comedy writer Coleman Jacoby, began producing documentaries for HBO, including the "Autopsy" series with Michael Baden. Her other producing credits include "The Iceman Interviews" and "The Iceman and the Psychiatrist." At the time of her death she continued working on a documentary about the Barnes art collection for HBO, which is currently in production.
She is survived by her husband, her stepdaughter and a brother.
