The trio joins the previously announced Penelope Cruz, Ben Kingsley and Patricia Clarkson.
"Animal" is directed by Isabel Coixet ("The Secret Life of Words"), adapted by Nicholas Meyer and produced by Lakeshore toppers Tom Rosenberg and Gary Lucchesi.
Story follows a grad student, portrayed by Cruz, who gets tangled up in an erotic affair with her professor, played by Kingsley, then returns years later with a revelation.
Lakeshore Intl. will distribute overseas, selling territories at the upcoming Cannes Film Festival. It's currently in production on "Pathology," "Midnight Meat Train" and "Untraceable."
Sarsgaard recently completed production on Gavin Hood's "Rendition" and "The Mysteries of Pittsburgh" and stars in "Year of the Dog," which opens this week.
